Pickles and Ice Cream

So I have been wanting to cook all week long. In Argentina they say a phrasal verb (for those of you who don't know what a phrasal verb is, its a verb that has two or more words that when put together have a different meaning. For example: to stike up means to start or the phrasal verb to break in which can mean many things like your house getting robbed or to make shoes comfortable but the meaning of these words separate mean something totally different) "Tener ganas" which to me sounds so much "richer" in words. Maybe because we over use the word want in the states, that when I say it so many times it loses its meaning. I'm sorry I always babble on about linguistics, but I like it, but I promise I am done, I hope.

So what I made: Homemade pickles! I love pickles, sweet dill pickles to be exact. I bought the cucumbers about a week ago and have been wanting to make them, so I finally bought all the stuff. I had never bought the spice Dill before so I didn't know where I could get it, but on the second shot I got some! So here is the easy easy recipe for those of you who love pickles:
two tablespoon of salt dissolved in 10 cups of water. Cut cucumbers in spears and leave them overnight in the salt water. The next day, drain them. After draining put them into the jar. Add to the jar your spices, I chose: 2 big garlic cloves, tablespoon of crushed red pepper, tablespoon black peppercorns, tablespoon of sugar. After I threw all that in, I filled it with white vinegar. Easy Breezy!

I made them Tuesday so it has been 5 days now and even though it said to wait 7-10 days, I already tried them. I have too much anxiety to wait that long, haha. I am glad I tried them though because they were perfect. I like my pickles crunchy so they were just how I like them. Diego on the other hand, will probably not get a chance to try them because I will eat them all before they get to the point where he likes them. poor Diego!

so after Tuesday's pickles I started to think and I figured out and that Dill is what Bear(my grandma) used to use to make her famous dilly bread, duh!!! So guess what I made next, Dilly bread :)

Although I realized that it calls for cottage cheese and since that doesn't exist here in Argentina, I had to make some changes. I made it with a mix of whole milk and heavy cream cheese. It still turned out so delicious! I love it and so did Benji!

Then we finished off the week with Benji's God mother finally being able to come back to swim lessons. Benji swam around the pool all my himself on his noodle. Sometimes the swim lessons can be boring but this one was so fun to watch. He had all one on one time and without a lot of other kids it appeared that he felt more confident. I know our winter here in Agrentina has barely started but I am already looking forward to this summer, bring on the heat!!

Well, Praise God for Another Week.
Happy Father's Day to My Dad Tony Avila. Thanks for shaping up and becoming a great man.
Also, My husband Diego Piccione. The greatest thing I think I could ever give my son is a great father, and that you are. We love you!!
